Simple GF Corn Muffins

Hey everyone! Tonight my mom made baked chicken, green beans, and boiled red potatoes for dinner, so I decided to whip up some GF corn muffins! Here is my adventure, and how to make them. Enjoy! :)

I started off by grinding oats in our dry Vita-Mix to make homemade oat flour. You can use any flour of your choice, but oats are my personal favorite for baked goods.


Next I mixed all the dry ingredients in a large bowl.

I added the almond milk and Applesauce to the dry ingredients. :)

Added some honey to that!

Stir it all up

Pour the batter into your muffin liners (I use reusable silicone liners).

Pop them into your preheated oven for 14-18 min, or until a toothpick comes out clean. And voila! Delicious, super easy corn muffins.

My whole family loved them, and so did I!

Simple GF Corn Muffins
Ingredients:
3 cups cornmeal
3 cups flour (I use oat)
3 TBS baking powder
1 1/2 tsp salt
3 cups milk (I use almond)
3/4 cup unsweetened applesauce
3/4 Cup honey (Use agave, maple syrup or 1/2 cup sugar for vegan option)
Instructions:
1. Preheat oven to 400°
2. Wisk dry ingredients together in large mixing bowl.
3. Add wet ingredients to dry. Stir until just combined.
4. Scoup batter into lined muffin tins, filling about 3/4 the way full.
5. Bake for 14-18 min, or until toothpick comes out clean.
Makes about 3 dozen.
