Heavenly Chocolate chip breakfast muffins (GF!)

Do you want a quick and easy, but actually delicious (*ahem* heavenly) breakfast? Yeah, me too. And that's when these little beauties came into my life. I actually wrote this recipe when I was around ten, and have just been improving it since then.

Makes: 24
Prep time: 15 min
Bake time: 20 min
Total time: 35 min
Ingredients:
2 2/3 cups oat flour
1/2c honey
2tsp baking soda
2tsp baking powder
2tsp salt
1 cup chopped walnuts (optional)
4 bananas, mashed
2/3c peanut butter (I've also used almond butter)
2tsp vanilla extract
1 1/3 cups milk (I use almond or soy.)
Optional shredded coconut for sprinkling on top
*I have also made this with 1 1/2 cups of shredded coconut in the actual muffin, and it tasted great!
Directions:
1. Preheat oven to 375 degrees farenhight
2. Mix dry ingredients together.
3. In another bowl, mix wet ingredients.
4. Combine dry and wet ingredients.
5. Place lined muffin tins (I use reusable silicone liners)
6. Bake for 10-15 min, or until a toothpick cones out clean.
7. ENJOY!!!
